Should've been in bed an hour ago, but being without real net access (love the smart phone, but it's not ideal) for a day and a half meant a lot of catch up.
I am now 90% moved in to the B'ton apartment, and I briefly stopped by my new employer. Nice people. Casual, but obviously on the ball. And I'm already getting assignments first thing Monday. Gah.
I ate bacon today. It was in a quiche I'd been assured was spinach and artichoke only. I was hungry enough that I finished it even once I realized what I was eating. I guess falling off the wagon with tuna noodle casserole was really falling off.
So far, no major gastro distress. But I don't think I'll be repeating that. Eating stupid seafood makes me feel guilty enough. Eating stupid fowl is still iffy for me. Eating an intelligent mammal--no. Not hurling sick, but I feel icky anyway. I'm sorry, pig. You deserved better than to be part of my lunch.
I'm cooling my heels here for two more days, then back to B'ton Sunday to finish the apartment arranging. After that, I'm likely to be fairly scarce, since I'll be working full time hours. I also don't know what my net access will be immediately, since the cable/net people haven't called me back yet.

The other issue is that I need to start cutting back on my soy (too much phytoestrogens, since I already have estrogen dominance problems,) and since I get a lot of my protein from soy meat substitutes, that means I need to lighten up on those.
I also find myself doing a lot of carb-based meals (pasta, etc.) when I should be doing protein-based meals (insulin stuff.) Without the soy, that limits my protein options to eggs, dairy and beans (and supplementing with nuts.) All of which I love, and eat a lot of, but the options to eat them without spending a lot of time cooking are few. I usually only have the time and energy to cook one meal a day, and the rest of what I eat comes in a can or box.
Since I need to graze (rather than do the three large meals thing) that means the best options for me are usually things like a burrito, a can of soup, a frozen entree, a sandwich, etc. And few of those are both low-carb and veg. I also need to eat more salads, but since most pre-made salads (stuff I could grab from a grocery deli or one of the food stations on campus or something) either have no protein or use some meat (salmon, tuna, chicken) that kind of limits me there, too.
At the moment, I think I'm going to do one seafood meal a week, and see how that works out. If I can manage it, I'll probably add one chicken or turkey meal, and then leave it at that. I seriously doubt I'll do pork or beef. I think that will help curb the carbs and soy and boost the iron past what the pills can do while not adding much in the way of fat and cholesterol (my lipids are usually good, except my HDL is often a tad low.)

These guys eat fish occasionally. You could of course replace the soy with any number of things.
