The Money Pit

So, we got an offer today, but it's a little on the low end. Not a low-ball, but definitely the lower end of reasonable--just this side of insulting. We can't counter-offer, though, since it's a VA loan. So we're trying to decide whether to take it.

Given that we're not even two weeks into the listing, I'm guessing we'll easily get another offer sometime in the next few weeks, but the question is whether that offer will be higher enough to make the wait worth it.

We're going to talk about it more tonight after M gets home, and our agent did say she's talking to another agent who wanted to be kept in the loop, so we'll see. We have until 9p tomorrow to decide.

Tonight's very tasty dinner, in slapdash recipe form:

Chopped up chunks of onions, shallots, garlic & celery, cooked down in a dollop of your favorite fat (in my case, this is Smart Balance.)

Roughly chopped greens, however much and whatever kind you like, tossed in the pot and wilted (chard, in my case.)

1 can each of Italian-style stewed tomatoes and mixed beans (I used chili beans), undrained.

Stock enough to fill the pot.

Simmer until the greens are cooked very well, then throw in a handful or two of small pasta for the last 10-15 mins.

Add salt and/or pepper if it needs more.

Consume with large chunks of crusty bread.

Pat belly in satisfaction, and look forward to consuming leftovers for lunch.
